TikTok Salmon Bowl...
OMG this is soooo yummy and easy to make! Who doesn't need another simple TASTY family dinner to add to their repetoire. We're on a mission to keep sharing EASY and yummingly delicious food so I've discovered listening to my kids share their TikTok/YouTube food videos is an amazing source of inspiration! We've made this a few times with my kids driving the prep. We've found that the amounts of each ingredient don't seem to matter and you can adapt according to your taste. Some kids might not like as much spice with the Sriracha but wow does it help give it so much flavour - I bet they don't mind it a bit. If you have picky eaters, they might actually just need more flavour (kid #2 is like this for me so I learned the hard way!).
Basically you cook use leftover salmon, pop it in a bowl and flake it up. Add cooked rice on top with an ice cube and pop it in the microwave (this creates steam and ensures it stays moist). Then simply add soy sauce, kewpie mayo (we used vegan mayo), and sriracha. Stir it all up and add some healthy green bits - avocado and we threw in cucumber and edamame. A side of kimchi along with a pack of cut up nori adds the piece de restistance. I'm getting hungry just looking at this -
Try other options such as swapping marinated tofu or chicken for the salmon, but remember, the point is to keep it simple! Bon appetit!
