Easy Quiche for the Lunch Box

Quiche would have to be one of those dishes that I make weekly and I could probably make it with my eyes closed. It's versatile - for breakfast, lunch, dinner or a snack, fast to make, portable and our whole family loves it - most of the time depending on what I slip inside!

Here's my no fuss recipe that anyone can put together!

Easy Lunch Box Quiche

Main Ingredients:

2 sheets of frozen pastry (or go crazy and make it fresh, but I prefer fast and easy!)
4-5 eggs
200g milk or non-dairy milk (I use coconut or almond milk)
1 tbl corn flour
1 tbl fresh veggie stock (easy to make or use a stock cube)
Sea salt and pepper

Optional additions: (use anything you have in the food and if necessary, chop them super tiny for unsuspecting children!) :)
200g chopped bacon/ham/tofu/any leftovers
Vegetables ie broccolini, mushrooms, tomatoes, peas, corn, pumpkin
200g shredded cheese - mozzarella, ricotta/cottage cheese, boccincini

Method:
Preheat oven to 200C.

Leave 2 x frozen pastry sheets on the counter for 10-15 minutes so they can thaw. Once thawed grease a round/square tray and lay the uncooked pastry in the pan covering the bottom and sides. (You may need to trim sides and fill holes to cover all sides, be creative). Set aside and lower oven to 180C.

Pan fry any meat/tofu/vegetables in ghee for extra flavour or roasted vegetables also work well. Spread evenly in a prepared pan over the pastry along with cheese.

In a mixing bowl add eggs, milk, corn flour, stock, salt and pepper and mix with a stick blender/Thermomix/blender until light and fluffy - at least 1-2 minutes. Pour over ingredients in pan.

Bake for 45-55 minutes (check it after 40 minutes especially if you have a hot oven) or until golden brown and a toothpick comes out clean. Serve warm or allow to cool. Can be stored in the refrigerator safely for a few days.

Quiche is great finger food and is ideal for school/work lunches (transport your delicious quiche in one of our stainless steel bento boxes with a spork!), snacks, fast dinners and definitely picnics.
